RC Cola Cocoa Cake

Ingredients:

 

  • For the Cake:
    • 2 cups all-purpose flour
    • 2 cups granulated sugar
    • 1 teaspoon baking powder
    • 1 cup butter
    • 1 cup RC Cola
    • 5 tablespoons unsweetened cocoa powder
    • ½ cup buttermilk
    • 2 eggs
    • 1 teaspoon vanilla
  • For the Frosting:
    • 7 oz marshmallow cream
    • ½ cup butter
    • 3 tablespoons cocoa powder
    • 9 tablespoons RC Cola
    • 4 cups confectioners' sugar
    • 1 teaspoon vanilla

Directions:

  • Preheat oven to 350°F. Grease a 9x13 pan.
  • Combine flour, sugar, and baking powder in a bowl.
  • In a saucepan, melt butter with cocoa powder and RC Cola. Bring to a boil, then mix into the dry ingredients.
  • Add buttermilk, eggs, and vanilla. Pour into the pan and bake for 40 minutes.
  • Prepare frosting by combining butter, cocoa powder, and RC Cola in a saucepan. Stir into confectioners' sugar and vanilla.
  • Frost the cake first with marshmallow cream, then the RC Cola frosting. Let it cool before serving.
